Floating Island with Fresh Fruit

Ingredients
- 6 egg whites
- 200g sugar
- Assortment of fresh fruits
- Custard
Instructions
In a bowl, put the egg whites and sugar, mix.
Beat the egg whites until stiff with an electric mixer, starting the first two minutes with the salad bowl placed on a saucepan of simmering water and finishing off heat until the final firm consistency.
Fill a cake tin (microwave safe) or a glass bowl with the snowy egg whites. Cook for about 2 to 3 minutes in the microwave at maximum power.
The whites should blow about 2 to 3 cm from the initial level. Leave to cool for about 10 minutes and unmold the egg whites onto a dish.
Garnish with fresh fruit cut into a fruit salad and serve with custard.
